If summer were a contest, I think we won by a landslide.
I’ve been house/dog sitting for some friends this week, with a beautiful back patio/pool/grill set up. I suggested that we grill something delicious to enjoy poolside. And my husband, who has great ideas, sent me these recipes. After drooling my way through that list, we decided to revise these cilantro lime shrimp. Man, am I glad we did. We wanted to grill some chicken too, so we marinated a pound each of chicken and shrimp (separately, of course) in the cilantro lime marinade. We also whipped up a quick marinade of olive oil, worcestershire, garlic, s+p, and parsley, for some quartered white mushrooms, so no one can accuse us of not eating vegetables (kind of).
Instead of the roasted poblano sauce, we decided to use up some things from the fridge. So I whipped up a dipping sauce from greek yogurt, mayo, sriracha, lime juice, garlic powder, and fresh chopped cilantro.
I’m happy with our decision.
